Callebaut cacao butter is made by squeezing oils from a supreme selection of whole roasted cacao beans. It is 100% pure, with a neutral taste and color. It is an excellent base for mixing fat-soluble colors and applying decorations. Cacao butter also allows you to adjust the thickness of your chocolate: add between 1% and 8% of cacao butter to the total volume of your chocolate to make it a touch more fluid, which is ideal for thin shapes and glazing, enhancing chocolate gloss.
